Taste of Tonga, Virgin Coconut Oil, Vanilla, Bio Gas and Organic Garden . . . . . . . Follow Our Zero Waste Process.

Virgin Coconut Oil  (VCO): Our goal was to maximise the value in every single coconut and leave zero waste.

You need 15,000 coconuts to produce 1,000 litres of Virgin Coconut Oil (VCO). We ask our vanilla growers to collect the coconuts from their plantations and sell them to us. On a busy day we can process up to 3,000 coconuts so by the end of the week we could have the accumulated waste from 15,000 coconuts sitting about.

The VCO production process is as follows, the first step is to remove the outer husk and then with a special machine we remove the hard inner shell leaving us with a coconut still full of water. The coconut is then cut into quarters and the water is collected in a tank. The next step is to grind it up. The grinds are then slowly warmed on a large coconut husk powered “BBQ” to evaporate the moisture. The grinds are then pressed to release the VCO. We then filter the oil and package it for export.

Waste, problem or opportunity. In one month we could have 60,000 husks, 60,000 shell fragments and the post press coconut grinds of 60,000 coconuts. That’s a mountain of each.

To gain value from waste we give the husk to our 250+ vanilla growers. The vanilla plant is an orchid and derives nourishment from decaying coconut husks.

Another pile of “waste” is the shell fragments. We plan to install a gasifier to convert the shells into 20kW of electricity. In simple terms, you heat the shell, it releases syngas which drives a combustion engine which drives a generator that pumps electricity onto the grid.

The last pile of “waste” is the coconut grinds and these are turned into pig and maggot food. Maggots! Well maggots are 64% protein and almost the perfect food for chickens. Chickens are carnivores and they love coconut fed maggots. The maggots provide our free range chickens with food and the chickens provide us with eggs and the odd noisy rooster to eat.

The grinds are also fed to the pigs. The bottom line is the more you feed pigs the bigger they get and the more they poop.

We wash the poop into a bio gas digester. In the digester the bacteria breaks it down and releases methane gas. The gas is collected and used in vanilla processing, soap making or sea salt recovery. The waste from the biogas plant is a nutrient rich liquid fertilizer that goes into the vegetable garden.

The vegetable garden waste doesn’t go to waste either as it is used to feed the pig, chickens or our worms. The worms convert it into worm castings for our seedling beds.

We believe we are as close to zero waste as we can achieve.

Our product list includes virgin coconut oil and cured vanilla for export, mulch for the vanilla, coconut vinegar and cheese, pig food, maggot food, chicken food, chickens, eggs, pork, coconut cream, taro and manioke chips, methane gas, garden fertiliser, vegetables, salt, VCO soap and soon both electricity and mud crabs.

Our products are supplied to “Vava’u Villa Restaurant and Bar” or “Coffee Plus” or “Action Vava’u”. The waste from the restaurant and coffee shop go to the chickens and pigs and the coffee grinds are what we cultivate our oyster mushrooms on. Used cardboard boxes are fed into the worm farm.

The zero waste process is one of ongoing refinement and in our belief is one that adds significant value to our businesses to make them more sustainable, interesting and profitable.
